[In nature, carbohydrates (sugars) are created in plants, where they function as building blocks and energy suppliers. Then, carbohydrates are one of the major components of our food. There is a difference between carbohydrates intended for consumption and carbohydrates as constituents of biomolecules. In the latter case, these carbohydrates (glycans) play most important roles in human life. The outer surface of nearly all cells in the human body is covered with carbohydrates linked to proteins and lipids present in the cell membrane. The carbohydrates are responsible for many biological events, such as cell–cell interactions and host–pathogen interactions. At the same time, most circulating proteins in the human body, like enzymes and hormones, are glycoconjugates, where the attached carbohydrates are often essential for functioning. This chapter shows some examples. It can be ascertained that sugars are involved in nearly all aspects of biochemistry of life.]
